This role is in a German-speaking kitchen running a gutburgerliche menu from May through to the end of September. Think regional classics done properly: schnitzel, hearty stews, the kind of food that takes real skill to cook consistently well but doesn't need a brigade of twelve or a head chef breathing down your neck.
